Grape Varieties: Grenache, Syrah

Wine Making: cold pre-fermentation. The duration of vatting can go up to 30 – 40 days during which the temperatures are controlled. The juices and then the wines are pumped up every day. The duration of maceration is defined by the tasting of the wines. The marc is devatted and then aged in vats (50%) and in new oak barrels (50%) for 12 to 16 months. The wines are then blended and bottled.

Tasting Recommendations: Temperature 13 – 15 °C

Brilliant and limpid color with deep purple reflections
Complex and expressive nose of gooseberry, truffle spices and undergrowth
On the palate, round wine on the attack, dominated by spices (pepper)
with hints of cocoa and tobacco liquorice; supported by melted tannins.

Pairing: Duck parmentier, roast pork with figs, stuffed cabbage…

Ageing: 7-10 years

Available Bottling: 75cl and 150 cl
