Grape Varieties: Grenache, Syrah

Wine Making: This wine comes from the assembly of our best vats. We adapt the work according to the daily tasting according to a vinification scheme combining tradition and precision: the grapes harvested at full maturity are first destemmed and crushed, then after a cold pre-fermentation phase, fermentation is initiated. The vats are worked every day by pumping over. The vatting period can go up to 40 days, with constant temperature control. The free run wine is separated from the press wine, then the malolactic fermentation takes place in vats.

Tasting Recommendations: Temperature 15 – 16 °C

Brilliant purple color with garnet reflections. Complex and expressive nose of very ripe black fruits, milk caramel and spices (pepper) announcing opulence. The mouth keeps this promise with a very nice volume and a sustained but generous tannic structure.

Pairing: Roasted duckling, pigeon fillet with lees, duck risotto…

Ageing: 4-7 years
